Lots of fall goodness...
On holiday Monday we went in search of an apple orchard. Although we didn't find a place where you can pick apples, we did happen upon a place that sells local produce. I went crazy for the fall produce. I picked up a couple of butternut squash to make soup. Squash is a fairly good source of anti-cancer phytonutrients. I made this soup extra rich by adding a whole bulb of roasted garlic to it! I also roasted garlic to have with the multi grain crusty bread. My hubby thought the meal was fantastic. Personally, although I totally adore roasted garlic, I hate to admit, it was a bit too much garlic. Although all that garlic is totally fantastic for the prevention of atherosclerosis and diabetic heart disease, and reducing the risk of heart attack or stroke.

Your squash soup sounds delightful and looks fantastic. I'm so glad that the squash season is upon us. Hopefully you can find a u-pick orchard soon :) I love going to the orchards (well, except for all the mean bees that hang around).

urban vegan - the fall harvest makes up for the end of summer, that is for sure. I am happy to be able to turn my oven on again.
emmy - we headed to the pick your own orchard on Friday, it was a blast. We got 10 pounds of apples for $5.00!!!!! The most amazing thing is that they actually taste like apples. They are so sweet and yummy.... not like the ones in the grocery store - the only thing about them that resembles an apple are their visual look and texture.
kleo - roasted garlic is yummy, what a great way to add richness to a meal without adding any dairy.
hi carrie - thanks about the top 5 - I'm still happy with my list....I thought I might think of something I would rather have later. So far I have only wanted to add one thing to that list. I was buying flax seed meal at the bulk barn on Friday and it was so cheap... so I think that should have been on my list since it is such a great source of omega 3's and much cheaper than walnuts... plus a great egg replacer when mixed with water if you are vegan.
I was at the Veggie Food fest today. Funny thing is they have this whole seminar on kale! LOL!
