Easy, easy, easy


OK, so not the cutest picture. This was one of the simplest things I have ever made. It comes from Nava Atlas' Vegetarian Family cook book It basically involves boiling some noodles of your choice, sending a box of mori nu through the blender and adding in some cheddar cheese. This was so easy. My daughter loved it too, so it definitely passes the kid test. I thought it was a great way to healthy-up traditional mac and cheese.

    Mmmm. Mac and cheese has to be my favourite. That sounds really interesting. Did you use cheese or vegan cheese. And I'm assuming the sauce was warmed up?

    Oooo! I like mac n' cheese! How do you like that cookbook? I'm itching to add to my collection and I have a few that I'm looking at - that book being one of them.

    Hey melissa - I used real cheese - my downfall and one of my stumbling blocks to becoming vegan... I am sure you could use a good vegan cheese. And, yes, the sauce was warmed up.

    carrie and megan - you have to get the cook. I am quite enjoying it. What I like most is the simplicity of the recipes, prep to table time seems minimal... easy meals on the table without too much effort.
