Mexican Lasagna



This is another recipe from Dreena's new cook book Eat Drink and be Vegan. This recipe is super healthy. The legumes give a great boost of fiber and protein. I wasn't overly fond of the cooked avacado, but next time I think I would just leave it out. I love these layer casseroles.

    Haha...I'm always amazed when people combine the foods of two different cultures and that mexican lasagna actually looks pretty awesome. I guess it all boild down to the beef and the tacos on top are a nice touch. I'll be sure to try this one for sure. Thanks!
