Happy Easter!
Yesterday I tried my hand at my first lemon merengue pie. My husband's parents had invited us for dinner and I offered to bring along dessert. I made the pie yesterday morning and had a heck of a time keeping my husband and daughter off of it until we ventured out to my inlaws for dinner. Of course we couldn't actually wait for dessert so we did the civilized thing once we arrived and had the pie before dinner for afternoon tea. It was awesome and lemony!

Homemade lemon meringue pie is so good. I always think that I don't like meringue, but when I taste it, I remember that I really, really do.

OK, busted, I'm not vegan! I am an aspiring vegan, I would like to be vegan, but eggs and cheese, man they gotta hold on me! So, big apologies, no the pie is not vegan... and no I have not become vegan yet. I am just a lowly vegetarian.
vicki - now that's an idea - pie for breakfast, nothing better if you ask me - why do you think those all day breakfast diners always have pie!
judy - I think lemon is one of the best flavours in the world - maybe even the best.

Oh, how delicious. Lemon Merengue used to be my absolute favorite. This looks beautiful - good job, lady!
