Trying New Things...
This morning I tried two new things. I purchased a small bag of hemp seed nuts to try cooking with them. I tried the Apple Hemp Muffins from Vive le Vegan. The bag I bought was a little too small as it barely had half a cup in it. Anyway, the muffins were good, and very filling. I think they would have been a little plain if I had not added some raisins. I also used maple extract in the place of vanilla extract since I am out. These are a fantastic breakfast muffin.
Next up are the coconut lime cookies which I have been meaning to try for a long time. I thought they would be really pretty and I think they did turn out to be a pretty cookie. It probably would have been better to make them a little smaller. These are a tastey cookie for summer!

Thanks xianfu. You of course can have some of those muffins! They were so satisfying and filling. I didn't have the mid-morning starvation hit me this morning. Must have been all that slow release of sugar with the rolled oats and hemp seeds. Definitely recommend those to get you through the morning.

I've cooked both of these recipes & totally agree with the raisins in the muffins. My cookies didn't turn out as pretty as yours...my cookie dough kept spreading & making giant cookies, but they sure were delicious!

I made those muffins last week and they turned out amazingly well. I would like to add raisins or dates next time. I find them very light in texture, but very filling as well. I think they triple in size in my belly. I would really like to try those cookies as well. Sounds like a great flavour combination.
Sometimes you just have to veg' out. Glad you're back.

Megan - For the coconut lime cookies I think next time I would like to try rolling them out and then cutting them into pretty tea shapes - I think they demand that since they are kind of like a sugar cookie... wouldn't it be cool to serve them with lime sorbet, cut into pretty shapes?

Hi Carrie, Yes, I think they definitely tripple in size in your belly... I think I subconsciously remembered your post in deciding to bake these muffins! LOL!
