Spanakopita (Spinach Pie)



Wow! This was fantastic. It is from Vegan with a Vengance. I have been a bit gun shy with this cook book since the scrambled tofu - which is silly because everything but the scrambled tofu has been excellent. I cooked it this morning since the weather has been so hot and we had it at dinner. It was so good - even cold. I can't imagine how good it might be warm! I loved the combination of tofu, ground walnuts and spinach for nutritional value. I will definitely make this again. Once again, it would be a good take a long to a non-vegan family dinner, so that our family can have something satisfying to eat. Why yes, that is the recycled quinoa salad, for the last time, I promise!

    Hey - it's cool to hear that you liked this recipe. I was gun shy about it too, but I was so impressed when I finally tried it. Normally I find mock-cheezes a little disappointing, but the combo of walnuts, tofu and zing from the lemon really works in this recipe. Yum!

    You are right, trying to recreate things out of tofu can sometimes be disappointing, but this time it works. My dh loved it too. There isn't much left, but he is taking what is left with him camping this weekend.

    I finally ordered Vegan with a Vengence. I've heard too many good things about it not to get it. I couldn't find it at the bookstore so I ordered it on line from Chapters. Just to let you know....if you're interested....they have the Moosewood Celebrates cookbook, hardcover, on sale. Regular $60 on for $14.99!! It's in the 'save 80%' section. I got one for myself and ordered one for my friend for either birthday or Christmas. It was just too good of a deal to pass up.

    Yay Carrie! Now see, I need to do the same thing with Dreena's Everyday Vegan.

    I love Vegan with a Vengance and its post punk style. The cupcakes are to die for - make sure you try the lemon gems and coconut heaven cupcakes are sublime - you can see some posts of those cupcakes in my archives. Her ginger pear waffles are another favourite.

    I can't wait for Isa's cupcake book to come out. Watch out!

    I checked back at your cupcake pictures and they look divine! At the wine store we always have "Christmas in July". We're just too busy at Christmas to book time off for a party, so we have our Christmas party in the summer. I think it's going to be a potluck BBQ. I want to make a salad of some sort and I think cupcakes would be wonderful to take. Easy to transport, a no mess food to eat outside, perfect size.... Oh, you've inspired me! Thanks!
