Quinoa for Breakfast
This was a fantastic breakfast for the hot humid weather we were having. This is a bowl of quinoa (cold) with frozen fruit, some sliced almonds, a bit of coconut and then a sprinkling of maple syrup, cinnamon, and soy milk. Quinoa is really light, so it was a great breakfast. Even though quinoa is a complete protein, my only complaint is that it wasn't quite filling enough (I usually eat a monster breakfast)

I sometimes make polenta for breakfast. These unconventional grains are a great break from oats in the morning.
